People do comment on the fact that our CV and cover letters tend to stand out from the crowd, and attract attention, and it is great that you also found this to be so.

You are right in that our CVs and cover letters look professional, and work well in print. It should also be possible to copy and paste them in recruiter applications that allows source formatting to be retrained. Not every recruiter application software is conducive to this, in which case it can paste as plain text - but as you rightly point out that can be tweaked and the most important thing is the actual content, and we are delighted that you are very happy with that.
