Collection of recipes. Not a lot of explanation regarding cooking concepts by sous vide.

Lots of inspiration in this book with great photos of the completed dishes. In addition to the main recipes there's sections on compression, brining, smoking, curing, butters, pickling and marinades.

Nicely written, lovely pictures, some excellent looking recipes.
