<p>This coconut sugar is a natural sweetener prepared from coconut blossom nectar, which is not bleached or processed in any way. The palm sugar is harvested by local farmers who are experts in climbing trees which can grow up to 150 metres high. Once up in the canopy, the farmer carefully cuts small notches into the tip of the coconut flower spikes and the nectar is collected at about the rate of half a litre every 6 to 8 hours.
